Chang’s Chinese Lettuce Wraps

Ingredients:
8 dried shitake mushrooms
1 ½ lbs. chicken diced or ground
2 cloves garlic, chopped
2 green onions, minced
2 small dried chiles
1 head lettuce
Marinate: 1 t. cornstarch, 2 t. sherry, 2 t. water, salt & pepper to taste
Sauce: 1 T. Hoison sauce, 1 T. soy sauce, 1T. dry sherry, 2 T. water, 1 t. sesame oil, 1 t. sugar, 2 t. cornstarch
Dipping sauce: ½ cup water, ¼ cup sugar, 2 T. soy sauce, 2 T. rice vinegar, 2 T. ketchup, 1 T. lemon juice, 1 T. chinese mustard, 3 T. garlic-chili paste, 1/8 t. sesame oil
Method:
- Soak mushrooms. Marinade chicken in above marinate for ½ hour. Mix sauce ingredients- set aside.
- Sirfry chicken in wok. Add other ingredients, then add sauce. Serve in lettuce shells w/ dipping sauce.
