Chicken Lollipops with Honey-Chili Sauce

Ingredients:

12 chicken drummettes (2 lbs.)
Canola oil for frying
Fresh cilantro for garnish.
Marinade: 3 cloves garlic, minced, 1 T. minced ginger 1 T. Asian chili garlic paste, 2 egg yolks, beaten, 2 T. cornstarch, 2 T. flour1½ t. salt, ½ t. white pepper
Sauce:2 T. water, 1 T. Asian red chili paste , 1 T. honey

Method:

  1. With a paring knife, Scrape meat down as far as possible without removing the meat completely, to form a round lollipop shape.
  2. Whisk together all ingredients for marinade. Add the chicken, toss, and marinate in refrigerator x 1 hr.
  3. In a wok, heat 2” of oil until just beginning to smoke. Working in batches, fry chicken 3-5 min until golden brown on all sides. Remove with a slotted spoon and drain on plates lined with paper towels.  Complete all batches.
  4. Heat up water and chili paste for the sauce. When the mixture begins to simmer, stir in the honey. Remove from heat and drizzle over plated chicken. Garnish with chopped cilantro and serve.
