Chicken Satay w/ Spicy Thai Peanut Sauce

Ingredients:

6 boneless, skinless chicken thighs
½ cup soy sauce
½ cup dark borwn sugar
¼ cup fresh lime juice
2 T. sambal olek
4 garlic cloves, minced
1 T. sesame oil

Method:

  1. Cube chicken thighs into small pieces. Combine ingredients, then marinate chicken for 3 hours.
  2. Prepare medium-hot grill, then grill chicken pices until browned & cooked . Serve w/ peanut sauce.

Spicy Thai Peanut Sauce

Ingredients:

½ cup peanut butter
¼ cup hot tap water
¼ cup dark brown sugar
2 T. fresh lime juice
2 T. soy sauce
1 T. sesame oil
1 T. sambal olek
3 garlic cloves, minced
2 scallions, chopped
¼ cup chopped cilantro

Method: Mix all ingredients well in mixing bowl!
