Pad Thai
Ingredients:
8 oz. Rice noodles
¼ cup tamarind paste +¼ cup water
4 oz. chicken, sliced
6 T. peanuts, chopped
3 T. fish sauce + 2 T. sugar
2 T. lime juice
½ lb. shrimp or fried tofu
1 t. chopped garlic
2 eggs, beaten
1 cup bean sprouts
2 green onions, chopped
½ t. chilles, fresh coriander, lime
Method:
- Soak noodles in luke warm water for 30 minutes. In bowl, mix tamarind paste mix, fish sauce, sugar, lime juice.
- In heated wok, fry garlic, and then add chicken. Add tofu and/or shrimp. Add eggs and fry everything in wok for 1-2 minutes
- Add noodles and stir well. Add sauce and continue to stir fry. Top w/ peanuts, sprouts, scallions. Turn off heat.
