Pad Thai

Ingredients:

8 oz. Rice noodles
¼ cup tamarind paste +¼ cup water
4 oz. chicken, sliced
6 T. peanuts, chopped
3 T. fish sauce + 2 T. sugar
2 T. lime juice
½ lb. shrimp or fried tofu
1 t. chopped garlic
2 eggs, beaten
1 cup bean sprouts
2 green onions, chopped
½ t. chilles, fresh coriander, lime   

Method:

  1. Soak noodles in luke warm water for 30 minutes.  In bowl, mix tamarind paste mix, fish sauce, sugar, lime juice.
  2. In heated wok, fry garlic, and then add chicken. Add tofu and/or shrimp. Add eggs and fry everything in wok for 1-2 minutes
  3. Add noodles and stir well. Add sauce and continue to stir fry. Top w/ peanuts, sprouts, scallions. Turn off heat.
