Stir Fried Spicy Eggplant

Ingredients:
1 lb . eggplant, diced
1 t. minced garlic
Spicy sauce: 2 T. oyster sauce, 2 T. Soy sauce, 2 T. water, 1 T. white vinegar, 1 T. sugar,
2 t. sambal olek, ½ t. ground bean sauce, ½ t. sesame oil, 1 T. cornstarch slurry
Method:
- Combine sauce ingredients in bowl. Deep fry eggplant and drain on paper towels.
- Saute garlic. Add spicy sauce and simmer 20 minutes. Add eggplant and stir. Serve.
