Flavored Oils (From Bobby Flay)
Garlic & Red Chile Oil
Ingredients:
1 cup olive oil
2 T. garlic minced
1 t. thyme
1 t. rosemary
2 chipotle peppers
1 t. ancho chile powder
2 T. fresh lime juice
Kosher salt & ground black pepper
Method: Saute garlic in olive oil until golden. Blend all ingredients, slowly adding oil, salt, pepper.
Cilantro Oil
Ingredients:
1 ½ cups canola oil
1 cup tightly packed fresh cilantro
10 spinach leaves
½ t. kosher salt
Methods: Blend all ingredients for 5 minutes. Strain through a fine mesh strainer (don’t press) into a bowl.
Red Chile Oil
Ingredients:
5 guajillo chiles, toasted & chopped
1 cup canola oil
½ t. kosher salt
Methods: Combine chiles, oil and salt in a blender and blend for 5 minutes. Strain into a bowl.
