Creme De Menthe Brownies
Ingredients:
1/2 cup butter, softened
1 cup sugar
4 eggs
1 cup AP flour
1/4 tsp. Salt
1 - 16 oz. can chocolate syrup
1 tsp. vanilla extract
1/4 cup butter, soften
2 cups sifted powdered sugar
2 T. creme de menthe liquor
1/4 cup butter
1 - 6 oz. semisweet chocolate chips.
Method:
- Cream 1/2 cup butter, gradually adding 1 cup sugar and eggs, beating well after each addition.
- Combine flour and salt in a small bowl; add to the creamed mixture alternately with chocolate syrup, beginning and ending with flour mixture. Stir in vanilla.
- Pour batter into a greased and floured 13x9x2 inch baking pan.
- Bake at 350 degrees for 25 to 28 min. Cool completely. Brownies will shrink from sides of the pan while cooling.
- Cream 1/4 cup butter; gradually add 2 cup powdered sugar & creme de menthe liquor. Spread over brownies. Chill 1 hour.
- Combine chocolate morsels and remaining 1/4 cup butter in top of a double boiler; bring water to boil. Reduce heat to low; cook until chocolate melts. Spread over brownies; chill for at least 1 hour.
- For cutting, dip the knife in very hot water, wipe dry and cup the brownies into 1 1/2 inch squares. Yield: 3 dozens.
