Creme De Menthe Brownies

Ingredients:

1/2 cup butter, softened
1 cup sugar
4 eggs
1 cup AP flour
1/4 tsp. Salt
1 - 16 oz. can chocolate syrup
1 tsp. vanilla extract
1/4 cup butter, soften
2 cups sifted powdered sugar
2 T. creme de menthe liquor
1/4 cup butter
1 - 6 oz. semisweet chocolate chips.

Method:

  1. Cream 1/2 cup butter, gradually adding 1 cup sugar and eggs, beating well after each addition.
  2. Combine flour and salt in a small bowl; add to the creamed mixture alternately with chocolate syrup, beginning and ending with flour mixture. Stir in vanilla.
  3. Pour batter into a greased and floured 13x9x2 inch baking pan.
  4. Bake at 350 degrees for 25 to 28 min. Cool completely. Brownies will shrink from sides of the pan while cooling.
  5.  Cream 1/4 cup butter; gradually add 2 cup powdered sugar & creme de menthe liquor. Spread over brownies. Chill 1 hour.
  6. Combine chocolate morsels and remaining 1/4 cup butter in top of a double boiler; bring water to boil. Reduce heat to low; cook until chocolate melts. Spread over brownies; chill for at least 1 hour.
  7. For cutting, dip the knife in very hot water, wipe dry and cup the brownies into 1 1/2 inch squares. Yield: 3 dozens.
