Strawberry Tart w/ Shortbread Crust
Ingredients:
Crust:
½ cup unsalted butter
¼ cup confectioners' sugar
1 cup all-purpose flour
1/8 tsp. salt
Tart:
1 qt. fresh strawberries, sliced
1/4 c. sugar
1/8 t. vanilla
1 t. fresh lemon juice
1 T. cornstarch
¼ c. water
Dash of salt
Method:
- Blend crust ingredients to make a soft dough. Pat into a 9 or 10 inch tart or pie pan. Prick crust well with fork. Bake in 350 degree F oven for 15-20 minutes.
- Mix sugar, cornstarch and salt in a small saucepan. Stir in water. Cook, stirring constantly 6 to 8 minutes or until mixture is clear and thickened. Remove from heat and add lemon juice and vanilla.
- Cool slightly. Arrange sliced strawberries in tart shells. Spoon glaze over the top. Refrigerate to set glaze.
