Beef/Lamb Madras Curry
Ingredients:
1.5 lbs beef/lamb, cubed
2 large tomatoes, chopped
1 med onions, chopped
2-3 green chilles, finely diced
1 t. finely grated ginger
2 t. minced garlic
1.5 t. salt
½ can coconut milk
1/3 cup yogurt
Spices: 1 T. coriander seeds, 1 t.. black peppercorns, 1 t. fennel seeds, 10 fenugreek seeds, 4 cloves, 4 dried chilles
Method:
- Roast spices in a pan until fragrant. Place in blender. Saute onions in pan until browned. Add to blender. Allow to cool.
- Puree onion-spice mixture until ground.
- In saucepan, set to med-high heat and brown ½ diced onion.
- Add garlic, ginger, chiles & stir for 1 minute.
- Add meat and cook for 5 minutes.
- Stir in tomatoes, onion-spice mix, salt, coconut milk, and yogurt to pan.
- Cover pan and simmer for 30-45 minutes.
