Mangalorean Chicken Curry (Kori)

Ingredients:

4 chicken breasts
1 medium onion, chopped
1 cup grated coconut
1 t. tamarind paste
1 small onion, diced
1 can 6-8 oz coconut milk
1 clove garlic
Salt to taste
Oil, ghee as needed
Spices: 4 cloves, 1” cinnamon, ½ petal anice, 1 t. whole black pepper, ½ t. white poppy, 2-3 T. kundapur chilli

Method:

  1. Roast grated coconut until browned. Place in blender. In 1 T. oil, heat chopped onion, spices until browne.
  2. Let cool, then transfer to blender. Add kundapur chilli powder, tamarind and grind until smooth.
  3. Dice ¾ medium onion and place in pan. Add cut up chicken, salt- sauté for 5 minutes.
  4. Add ground masala to ½ to 1 cup water.
  5. Cook on med heat for 45 minutes.
  6. Then lower heat and add coconut milk to cook for another 5 mintues. 
  7. Chop remaining ¼ onion very finely and fry in ghee until fragrant. Add this to curry.
