Methi Chicken Curry
Ingredients:
2 lbs. chicken leg & thigh
2 large red onion
2 large tomato
1” of ginger
3-4 cloves of garlic
1-2 serrano peppers
Spices to taste: Salt, ground black pepper, red pepper, 2-3T. dried methi
Heavy whipping cream/ yogurt
Method:
- Saute onions until golden brown, then add tomatoes. Once tomatoes/onion mix dries out a little, add ginger,garlic,hot peppers-saute for 2-3 min.
- Place in blender, and puree until smooth.
- Return to saucepan, then add salt, black pepper, dried methi, and red pepper powder.
- Then add whipping cream-when the color stabilizes, add chicken.
- Simmer until chicken is cooked.
