Mom’s Biryani

Ingredients:
6-8 cashews
3 onions (1 ground, 2 chopped)
10 green chillies
6 garlic cloves
2 cups coriander , 1 handful mint leaves
1” ginger
2 medium tomatoes
2 cups Basmati rice (1:1 H2O)
2-3 lbs meat or chicken
Meat spices: 6 cloves, ¼ star anise, 1 T fennel seeds, 1” cinnamon, ¼ t. tumeric, 1 t. black pepper,
Rice spices: 4 cardamon, 1” cinnamon, 4 anise seeds, 2 small star anise, 15 black peppercorns in ghee
Method:
- Grind cashews, 1 onion, chillies, garlic, coriander, mint, ginger, & meat spices.
- Saute 1 chopped onion until brown. Add ground gravy & chopped tomatoes.
- Then add meat and simmer 15 minutes.
- In separate pan, stir fry 2nd chopped onion w/ ghee and rice w/ spices.
- Add meat w/ gravy and water.
- Transfer to casserole and bake covered at 400 degrees for 20 min, then 350 degrees for 15 minutes uncovered.
