Mushroom Coconut Curry
Ingredients:
½ lb mushrooms, chopped
½ onion, chopped
Spices: 1 minced garlic clove, 2 t. kundapur masala, ½ t. tamarind, ¼ t. garam masala, 2 T. coconut, salt
Method:
- Sauté onions in oil until golden brown. Add garlic, spices, tamarind. Stir well.
- Add mushrooms and cook on medium heat for 15 minutes or until softened.
- Add salt/lime juice as needed.
- Add coconut, then simmer 2-3 minutes. Garnish with cilantro.
