Shrimp Coconut Curry

Ingredients:
1 ½ lbs. Raw shrimp
1 onoin, chopped
3 green chilies, slitted
1 cup grated coconut,
4 T coconut milk
Spices: ½ “ ginger minced, 1 clove minced garlic, 1t. tamarind, salt, 2-3 T. kundapur masala, ½ lime juice

Method:

  1. Place everything (except ½ onion, lime, coconut milk) into pot.
  2. Place on medium heat & simmer ~25 min.
  3. In small frying pan, brown onion.
  4. When curry is done, add browned onion, coconut milk, lime juice.
