Shrimp Pulau

Ingredients:

1 + ½ large onion, diced
3-4 med tomatoes
1 bunch cilantro, chopped
½ bunch fresh mint, chopped
1T. lime juice
2 cups rice
2 lbs. shrimp
Oil for frying
1 T. Ginger-garlic paste
Spices: ¼ t. each: turmeric, cinnamon, cloves; 1 T. chili powder, 1 t. each: cumin powder, coriander powder, black pepper powder, Salt to taste

Method:

  1. Sauté chopped onion until brown. Add chopped tomatoes, cooking until tomatoes & salt are tender.
  2. Add all spices and g-g paste. Stir. Add shrimp & salt to taste, cooking on low heat. Preheat oven to 400 degrees.
  3. Fry ½ onion until golden –brown. Add washed rice & sauté for 3-4 minutes.
  4. Add cooked shrimp mixture, chopped coriander leaves & mint leaves. Now add water ~3 cups water & lime juice.
  5. Bake in oven for 20 minutes covered. Stir gently. Cook for additional 15 min at 350 degrees lightly covered.
