Greek-Style Moussaka

Ingredients:

Eggplant, sliced
1 onion, diced
4 cloves garlic, chopped
8 oz. tomato sauce
1 lb. ground turkey/pork
¼ cup parmesan cheese
Bechamel Sauce: ½ t. butter, 2 T. corn flour, 2 cups milk, salt to taste, paprika, pinch nutmeg
Spices: 2 t. oregano, 2 t. paprika, 2 t. parsley, 1-2 t. cayenne pepper, salt to taste, pinch cinnamon

Method:

  1. To make sauce , melt butter in saucepan. Add corn flour over a low flame. Then add milk.
  2. Stir constantly until sauce begins to thicken. Add other spices to season sauce.
  3. In frying pan, fry eggplant until well cooked. Set aside. Fry onions until browned.
  4. Add ground meat, and stir until cooked. Add garlic, tomato sauce, spices to meat mixture.
  5. In casserole dish, layer eggplant, meat mixture, béchamel sauce. Repeat this process, topping with parmesan cheese.
  6. Bake at 350 degrees for 15-20 minutes until browned.
