Pepper Crusted Filet Mignon w/ Ancho-Red Pepper Sauce & Toasted Goat Cheese

Ingredients:
1 red onion, chopped
3 cloves garlic, chopped
28 oz canned plum tomatoes
1 T. red wine vinegar
3 red peppers, roasted, diced
3 ancho chiles, soaked & chopped
1 T. honey
¼ cup chopped cilantro
Kosher salt, ground black pepper
3 t. cracked black pepper
8 ox. Fresh goat cheese
¼ cup pine nuts, toasted
Method:
- Saute onion & garlic until browned. Add tomatoes, red peppers, anchos until liquid thickens. Blend until smooth.
- Add vinegar, honey, cilantro, salt, pepper. Pulse to combine into sauce.
- Season steak w/ cracked black pepper, and sauté steak until browned & crust formed. Turn over & cook 3-4 min.
- Top filet w/ goat cheese and place under broiler until cheese is golden-brown.
- Ladle sauce on dishes, place steak. Garnish.
