Enchiladas Suizas

Ingredients:

2 roasted poblano chiles
1 cup heavy cream
12 corn tortillas
4 cups shredded chicken
1.5 cups shredded Chihuahua cheese
Fresh cilantro
4 cups cooked green salsa

Method:

  1. Heat oven to 375 degrees.
  2. Pour green sauce in blender jar, adding poblanos.
  3. Pour into medium saucepan, adding remaining sauce and cream.
  4. Soften tortillas in saucepan, then fill with chicken.
  5. Pour hot sauce over enchiladas. Sprinkle w/ cheese. Bake 20 minutes.

Cooked Green Salsa

 2 lbs tomatillos (cooked in saucepan)
2 jalapenos (cooked w/ tomatillos)
3 garlic cloves minced
1 t. ground cumin
1 T. salt
1 bunch cilantro
1 T. vegetable oil

Method:  Blend these ingredients together.  Simmer for 10 minutes.
