Fish Tacos
Ingredients:
4 (4-oz) files tilapia
½ cup lime juice
1/3 cup AP flour
2 eggs, beaten
2 cups Panko crumbs
1 cup + 1 T. Vege oil
1/3 cup lime juice
2 T. honey
1 t. ground cumin
1 cup chopped cilantro
8 corn tortillas
2 cups coleslaw blend
Chipotle Mayo: ½ cup mayonnaise, 2 chipotle chiles in adobo, 1 T. adobo sauce, ¼ t. salt, 1/8 t. cayenne pepper
Method:
- Marinate tilapia w/ lime juice, salt pepper for ½ hour. Whisk 1/3 cup lime juice, honey, cumin, 1 T. vege oil. Set aside.
- Make chipotle mayo w/ mayo, chilies, adobo sauce, salt, cayenne in food processor.
- bread fish by dipping in flower, then dipping in eggs, then dredging in Panko crumbs. Fry in oil until fish is cooked. Brush w/ honey-cumin sauce after removing from oil.
- Mix together coleslaw, cilantro, and some chipotle mayo. Assemble tacos and top with chipotle mayonnaise.
