Fish Vera Cruz-Style
Ingredients:
1 ½ lbs. tilapia or red snapper
6 T. olive oil
2 onions sliced
2 garlic cloves, minced
1 can diced tomatoes
24 green olives, sliced
2 pickled jalapenos, sliced
1” cinnamon stick
2 cloves
1 cup chicken broth
Spices: 1 t. dried thyme, 1 t. paprika, 1 t. cayenne, 1 t. parsley, 1 t. basil, 1 t. marjoram, ½ t. black pepper
Method:
- Saute onions in olive oil until browned. Add garlic, then tomatoes. Simmer 4-5 minutes.
- Add remainder of ingredients/spices except fish. Simmer 7-8 minutes. Season w/ salt.
- Add fish filets and simmer for 5-10 minutes until fish is cooked. Serve w/ rice.
