Indonesian Marinade
1 T. each ground coriander & ginger
1 ½ t. tumeric
1 ½ t. garlic powder
3 T. vegetable oil
1 T. sambal olek
1 T. dark brown sugar
2 t. kosher salt

Jamaican Marinade
¼ cup olive oil
2 T. Jerk seasoning
2 T. soy sauce
¼ cup rice wine vinegar
1 T. dark rum
juice of 1 lime
1 habanero pepper, minced
2 cloves minced garlic
½ cup chopped red onion
2 green onions, chopped
½ t. creole seasoning

Asian Marinade (From: Steve Raichlen)
4 stalks lemongrass, chopped
4 cloves garlic, chopped
2 shallots, finely chopped
2” ginger, chopped
5 jalapenos, sliced
1 cup cilantro, chopped
3 T. sugar
2 t. ground coriander
1 t. black pepper
¼ cup soy sauce
3 T. fish sauce
3 T. lemon juice, oil to taste
