Lemony Orzo Salad w/ Grilled Veggies
Ingredients:
3/4 cup uncooked orzo
1/4 t. grated lemon rind
3 T. fresh lemon juice
1 T. extra-virgin olive oil
½ t. kosher salt/black pepper
½ t. minced garlic
1/4 t. honey
1/2 cup crumbled goat cheese
2 T. chimichurri sauce
½ t. crushed red pepper
5-6 slices salami
Grilled vegetables, chopped
¼ cup chopped kalamata olives
1/2 cup chopped red bell pepper
1/3 cup thinly sliced green onions
Method:
- Cook orzo according to directions. Drain and rinse with cold water; drain and place in a large bowl. Let cool.
- While orzo cooks, combine lemon rind and next 6 ingredients (through black pepper), stirring well with a whisk.
- Toss juice mixture over orzo to coat. Add salami, vegetables, goat cheese, green onions. Toss to combine.
