Jalapeno Corn Bread

Ingredients:

1 t. canola oil
1 ¼ cup AP flour
1 ¼ cup corn meal
2 T. sugar
1 t. salt
1 T. baking powder
1 t. ground cumin
1 cup milk
½ red bell pepper, chopped
¼ cup minced jalapeno
3 T. butter, melted
2 T. cilantro, chopped
2 large eggs
1 can corn, drained

Method:

  1. Preheat oven to 425 degrees. Spray skillet w/ oil and place in oven.
  2. Combine dry ingredients, then add rest of ingredients.
  3. Bake for 25 minutes, until center is cooked. Let cool 5 minutes.

 

Spinach Bread

Ingredients:

2 pkg. 10 oz frozen spinach
1 C Bisquick mix
1/2 C Parmesan cheese, grated
1 C shredded cheese
½ t. seasoned salt
4 eggs, beaten
½ C oil
½ C onion, chopped
1 garlic clove, minced
1 C Monterey jack, shredded
½ t. salt
½ t. oregano

Method:

  1. Grease a 9 x 13 pan. Heat oven to 350.
  2. Mix all ingredients in a large bowl and spread into prepared pan.
  3. Bake about 25 minutefs.
  4. Let cool slightly and cut into squares.
