Potato Side Dishes
Potatoes Gratin w/ Goat Cheese & Garlic
Ingredients:
1 cup half –n-half
1 T. AP flour
1 cup crumbled goat cheese
1 cup 1% milk
1 t. salt
¾ t. ground black pepper
1 garlic clove minced
5 cups thinly sliced Yukon potatoes
Method:
- Combine all ingredients except potatoes.
- Layer potatoes and milk mixture. Bake for 1 hr @ 400 degrees until brown.
Lobster-Saffron Mashed Potatoes
Ingredients:
8 large potatoes, quartered
6 cups chicken stock
1 t. kosher salt
1 T. unsalted butter
½ cup cream
½ t. roasted garlic
Few threads saffron
½ cup cooked lobster meat
Method:
- Boil potatoes until soft.
- Smash potatoes w/ all ingredients until fluffy (except lobster).
- Then add lobster w/ final toss.
