Beef & Black Bean Chili

Ingredients:

1 can black beans w/ liquid
1 lb. top round beef or ground pork
1 onion finely chopped
1 green & red bell pepper, chopped
1½ T. jalapenos, chopped
1 can diced tomatoes in juice
1 T. cilantro & parsley
1 clove minced garlic
1 scallion, chopped
1 T. olive oil
Spices: 1 ¼ t. ground cumin, 1 ¼ t. oregano, 1/3 t. sage, 1/3 t. cayenne, 2/3 t. paprika, 1/3 t. black pepper

Method:

  1. Saute onions until translucent, then add peppers. Add beef/pork- sauté until browned.
  2. Add remaining ingredients to meat-vegetable mixture.
  3. Simmer for 45 minutes until soup is thickened.
