Spicy Asian Soup
Ingredients:
48 oz chicken broth
1 lb chicken, shredded
3T. cornstarch slurry
1 cup sliced mushrooms
1 red bell pepper, diced
Spices: ¼ cup soy sauce, 1 T. brown sugar, ¼ t. chili sauce, 2T. lime juice, 1” ginger minced
Garnish: 1 t. lime zest, 2 T. chopped cilantro, ½ avocado diced, fried wonton wrappers
Method:
- Combine chicken broth w/ spices.
- Boil for 5 minutes.
- Add chicken &mushrooms.
- Simmer for 10 minutes.
- Stir in peppers, zest, cilantro.
- Remove from heat and garnish.
