Spicy Tomato Basil Soup
Ingredients:
1 T. Butter
1 onion, chopped
1 carrot, chopped
2 T. flour
2 cups chicken broth
1 can crushed tomatoes + ½ t. baking soda
Spices: 1 T. tomato paste, 1 t. basil, ½ t. dried thyme, salt/pepper , 2 T giardeniera peppers
Method:
- Melt butter in saucepan. Sauté onions & carrots for 3-5 min.
- Add flour & stir 1-2 minutes.
- Add rest of ingredients and simmer on low heat for 15 minutes.
- Add giardeniera peppers.
- Puree soup in blender until smooth.
- Return to pan and season w/ salt/pepper.
- Serve w/ parmesan toast or garlic bread.
