Tortilla Soup

Ingredients:
6 cups chicken stock
1 lb. chicken cubed
1 cup onions, chopped
1 green & 1 jalapeno pepper, chopped
2 t. garlic, minced
6 stale tortillas, fried in strips
Spices: 2 T. olive oil, 1 ½ t. salt, 1½ t. ground cumin, ½ t. ground coriander, 1 t. tomato paste
Garnishes: ¼ cup cilantro chopped, 2 t. lime juice, 1 t. Emeril’s essence, avocado chopped
Method:
- Stir fry the onions, garlic, peppers until soft.
- Add spices, stirring well.
- Mix in chicken broth & simmer for 20 min.
- Add chicken,cilantro, and lime juice.
- Ladle soup and garnish w/ tortilla strips, avocado, sour cream.
