Garlic Chili Prawns

Ingredients:

2 lbs. tiger prawns
2 T. minced ginger
Steamed rice
4 cloves minced garlic
1 jalapeno, diced
6 green onions, sliced
Sauce: 6 T. soy sauce, ¼ cup rice vinegar, 4 t. sesame oil, ¼ cup ketchup, 2 t. sugar, 2 t. cornstarch, 3 t. peanut oil

Method:

  1. Mix sauce ingredients together.
  2. Heat wok until very hot. Add prawns and sear until both sides are browned. Transfer to a bowl.
  3. Return pan to high heat and add oil. Add ginger, garlic, chiles, 2/3 green onions. Stir fry until fragrant.
  4. Give sauce a quick stir into the pan until it starts to bubble. Immediately add the shrimp and stir until sauce is thickened.
