Ma Po Tofu
Ingredients:
1/4 lb. ground pork
1 lb. regular tofu, cut into 1” cubes
3 green onions, chopped
1/4 t. salt
1 tsp Chinese salted black beans
1 T. chili bean paste
3 T. chicken stock
1 T. cornstarch slurry
2 T. light soy sauce
Freshly ground Szechuan pepper
Pork Marinade: 1 1/2 T. cornstarch, 2 T. soy sauce
Method:
- Marinate pork for about 20 minutes. Meanwhile, shallow pan-fry the tofu until golden brown. Set aside.
- Heat wok and add marinated pork, stir frying until golden. Add salt and black beans. Add chili paste, then stock, bean curd, and green onions.
- Mix cornstarch, water, and soy sauce together. Add to wok and stir gently. Serve with freshly ground Szechuan pepper.
