Ma Po Tofu

Ingredients:

1/4 lb. ground pork
1 lb. regular tofu, cut into 1” cubes
3 green onions, chopped
1/4 t. salt
1 tsp Chinese salted black beans
1 T. chili bean paste
3 T. chicken stock
1 T. cornstarch slurry
2 T. light soy sauce
Freshly ground Szechuan pepper
Pork Marinade:  1 1/2 T. cornstarch, 2 T. soy sauce

Method:

  1. Marinate pork for about 20 minutes.  Meanwhile, shallow pan-fry the tofu until golden brown. Set aside.
  2. Heat wok and add marinated pork, stir frying until golden. Add salt and black beans. Add chili paste, then stock, bean curd, and green onions.
  3. Mix cornstarch, water, and soy sauce together. Add to wok and stir gently. Serve with freshly ground Szechuan pepper.
