Thai Noodles w/ Spicy Peanut Sauce
Ingredients:
8 ounces linguine
1/2 cup green onion, chopped
2 cups bell pepper, zucchini
2 breasts chicken or 1 lb shrimp
3 T. minced fresh garlic
1/2 T. ground ginger
4 T. sesame oil
Sauce,
½ cup peanut butter
¼ cup hot tap water
¼ cup dark brown sugar
2 T. fresh lime juice
2 T. soy sauce
1 T. sesame oil
1 T. sambal olek
3 garlic cloves, minced
2 scallions, chopped
¼ cup chopped cilantro
Methods:
- Cook pasta in a large pot of salted water according to package directions. Drain and return to pot.
- Add 2 T. sesame oil and toss to coat. Set aside. Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat. Add green onions, carrots, stir-fry veggies, garlic and ginger. Saute until vegetables soften, about 4 minutes.
- Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well. Simmer sauce 2 minutes. Pour sauce over pasta and toss well.
