Smoked Red Pepper Sauce

Ingredients:
4 roasted red peppers, chopped
1 T. honey
Salt ¼ cup red wine vinegar
½ small red onion, coarsely chopped
1 T. Dijon mustard
Freshly ground black pepper
4 cloves roasted garlic, peeled
1 T. chipotle puree
½ cup canola oil
Methods: Blend peppers, onion, garlic, vinegar, honey, mustard, chipotle and salt and pepper until smooth. Add oil slowly.
Roasted Poblano Pepper Sauce

Ingredients:
2 poblano chiles, roasted, chopped
1 clove chopped garlic
¼ cup canola oil
1 T. red wine vinegar
1 t. honey
Salt & freshly ground pepper
Methods: Blend all ingredients until smooth (add up to 3 T. water) & season with salt and pepper to taste
