Strawberry Tart w/ Shortbread Crust

Ingredients:

Crust:
½ cup unsalted butter
¼ cup confectioners' sugar
1 cup all-purpose flour
1/8 tsp. salt
Tart:
1 qt. fresh strawberries, sliced
1/4 c. sugar
1/8 t. vanilla
1 t. fresh lemon juice
1 T. cornstarch
¼ c. water
Dash of salt

Method:

  1. Blend crust ingredients to make a soft dough. Pat into a 9 or 10 inch tart or pie pan. Prick crust well with fork. Bake in 350 degree F oven for 15-20 minutes.
  2. Mix sugar, cornstarch and salt in a small saucepan. Stir in water. Cook, stirring constantly 6 to 8 minutes or until mixture is clear and thickened. Remove from heat and add lemon juice and vanilla.
  3. Cool slightly. Arrange sliced strawberries in tart shells. Spoon glaze over the top. Refrigerate to set glaze.
