Black Chicken
Ingredients:
3 boneless skinless chicken breasts, cut
2-3 chicken drumstick, halved
1/2 t. turmeric powder
2 T. white vinegar
1 T. ginger-garlic paste
2 T. tomato sauce
1 t. each: cumin powder, coriander powder, black pepper, sambar powder, garam masala, Kundapur masala
2 T. dark soy sauce
2 tsp. oil
2 large onions, sliced thin
5-6 hot green chillies
3 T. oil
1/4 cup chopped curry leaves
Additional soy sauce
Coriander leaves for garnishing
Method:
- Mix cut up chicken pieces with turmeric, vinegar and salt. Set aside for 15 minutes. Add remaining ingredients except onions and chillies. Cover and set aside for 2 hours.
- Cook marinated chicken without adding any water for 20-25 minutes stirring occasionally.
- While chicken is cooking slice 2 large onions and 6-8 hot green chillies. In a large pan heat oil and add sliced onions and green chillies. Saute until translucent. Add chopped curry leaves and above cooked chicken. Simmer on low heat for 30-40 minutes till the gravy is thick and dry. Add soy sauce if needed. Garnish with coriander leaves.
