Kadhai Saag
Ingredients:
1 onion chopped
16 oz. Frozen spinach, thawed
1 cup yogurt
Optional add-ons: paneer, channa, mushroom
Spices: 1T. minced ginger, 2T. minced garlic, ½ t. turmeric, 2 t. ground coriander, ½ t. chili, 2 t. salt
Method:
- Sauté onions until translucent. Add spices. Sauté for 2-3 minutes.
- Add spinach, 1 cup water, and salt.
- Simmer for 15 minutes.
- Remove from heat & puree in blender.
- Return back to stovetop and stir in mushrooms/add-ons and yogurt.
- Add paneer/channa/mushroom if you want.
