Lamb Seekh Kebabs
Ingredients:
2 lbs ground lamb
1 T. lime juice
¼ cup minced onion
2 T. yogurt
2 Serrano chilies, chopped
¼ cup minced garlic
¼ cup minced ginger
¼ cup besan (gram flour)
Spices: 1 T. ground cumin, 1 T. ground coriander, ½ t. ground cloves, 1 t. cinnamon, 1 t. cayenne, 1 ½ t. salt
Method:
- Mix all ingredients (except besan ) together.
- Sprinkle in besan 1 T. at a time until well mixed.
- Let rest 2 hours. Pinc h off 4 oz.
- Mixture and cover along length of skewer. Place in freezer for 2 hours.
- Bake in oven/broiler at 375 degrees or cook on medium-high heat grill for 20-25 min.
