Punjabi Kadhi
Ingredients:
Pakoras: 1 cup gram flour, ½ cup water, ¼ cup chopped onion, 1 t. ajwain, 1 t. cayenne, 1 t. ground ginger, ½ t. baking powder
Kadhi: 1 cup yogurt, ¼ cup gram flour (besan)
Spices: 2 dry whole chilies, 1 t. turmeric, 1 t. fenugreek seeds, 1 pinch asafetida, salt to taste
Method:
- Mix ingredients for pakoras and deep fry until golden brown.
- Beat together yogurt and gram flour. Add turmeric, salt, water.
- Heat oil w/ fenugreek seeds, chilies.
- Add yogurt mixture & stir.
- Boil, then simmer for 15 minutes. Add cayenne & pakoras.
