Sambar
Ingredients:
¼ cup toor cooked daal
1 carrot, thinly sliced
½ cup green beans, chopped
1 tomato, chopped
1 ½ t. Sambar podi
1 onion, chopped
¼ t. tamarind concentrate
1 pinch of asafetida
Salt to taste
Spices: 2-3 slitted chillies, 1 t. mustard seeds, 1 sprig curry leaves, ¼ t. cumin seeds, oil for frying
Methods:
- Cook daal ahead of time.
- Heat oil; once glistening, add spices and fry until they pop. Add onion- cook until golden.
- Add other vegetables and cook until soft.
- Add Sambar podi, then daal w/ 1 cup water. Simmer for 10 minutes. Season.
