Braised Beef Short Ribs

Ingredients:

5 lbs beef short ribs, cut
Salt & pepper
1 large onion, sliced
2 carrots, diced 
6 cloves garlic, smashed
28 oz. can diced tomatoes
1 sprig thyme
1 sprig rosemary
1 bay leaf
1 sprig sage
2 cups red wine
2 cups beef broth

Method:

  1. Put 1-2T. olive oil in pressure cooker. Add vegetables and herbs. Caramelize vegetables for 15 minutes.
  2. Brown short ribs till brown on all sides then place in pressure cooker with the vegetables.
  3. Add the red wine, beef broth and diced tomatoes to meat. Stir everything together to mix well.
  4. Turn heat to high. Lock lid into place and bring to pressure, then lower heat and cook for 25 minutes.
  5. Allow pressure to drop by the natural release method for 15 minutes.
  6. When safe, open lid and check the meat for tenderness.
  7. Put ribs in a dish. Skim fat and boil the sauce to thicken it (or add cornstarch slurry). Pour sauce over ribs.
