Braised Beef Short Ribs
Ingredients:
5 lbs beef short ribs, cut
Salt & pepper
1 large onion, sliced
2 carrots, dicedÂ
6 cloves garlic, smashed
28 oz. can diced tomatoes
1 sprig thyme
1 sprig rosemary
1 bay leaf
1 sprig sage
2 cups red wine
2 cups beef broth
Method:
- Put 1-2T. olive oil in pressure cooker. Add vegetables and herbs. Caramelize vegetables for 15 minutes.
- Brown short ribs till brown on all sides then place in pressure cooker with the vegetables.
- Add the red wine, beef broth and diced tomatoes to meat. Stir everything together to mix well.
- Turn heat to high. Lock lid into place and bring to pressure, then lower heat and cook for 25 minutes.
- Allow pressure to drop by the natural release method for 15 minutes.
- When safe, open lid and check the meat for tenderness.
- Put ribs in a dish. Skim fat and boil the sauce to thicken it (or add cornstarch slurry). Pour sauce over ribs.
