Grilled Chile-Marinated Skirt Steak
Ingredients:
1.5 – 2 lbs skirt steak, trimmed & cut cross-wise
3 cascabel chiles
2 guajillo chiles, toasted
2 pasilla chiles, toasted
½ cup water
1 t. cumin seeds
5 allspice berries, 8 peppercorns
2 cloves
1” cinnamon stick
5 garlic cloves
Method:
- Make adobo w/ drained chiles w/ adobo ingredients in blender- mix until smooth.
- Smother on grilled skirt steak- marinate for up to 1 day.
- Grill on medium-high fire to med-rare.
- Serve with lime wedges, salt, cilantro, onions, tomatillo salsa, spring onions, guacamole.
