Grilled Fish w/ Tomato-New Mexico Sauce

Ingredients:
2 T. olive oil
1 onion, chopped
4 cloves garlic, chopped
1 cup dry white wine
28 oz. Tomato puree
3 new mexico chilles, seeded
1 T. honey
Kosher salt, ground pepper
4 (8 oz) snapper or white fish
Method:
- Saute onion and garlic until browned. Add wine and cook until reduced by ½.
- Add tomato puree, chiles, 1 cup wter and cook until chiles soften (15 min). Blend sauce until smooth.
- Return to saucepan, and simmer w/ honey, salt, pepper. Grill fish seasoned w/ salt & pepper. Ladle w/ sauce & cilantro.
