Herb-Marinated Lamb Tenderloin Kebabs
Ingredients:
1.5 lbs lamb tenderloins
Marinade: 3 T. each chopped: fresh mint, fresh rosemary, fresh oregano, fresh thyme, 2 T. olive oil, 1 T. Dijon mustard, 1 t. kosher salt, 1 t. ground black pepper, 3 minced cloves, ΒΌ cup lemon juice
Method:
- Preheat grill to medium.
- Combine all marinade ingredients. Add lamb and seal to marinate for 30 minutes
- Remove from bag, skewer, then grill until done.
- Serve w/ vegetables, rice or polenta.
