Stuffed Chicken Breasts

Ingredients:

1.5 t. olive oil
1 lb green onions, sliced
¾ t. salt
3 oz. goat cheese
1 T. parsley, chopped
½ t. ground black peppe
1 T. milk 
1 ½ t. fresh thyme
6 chicken breast
½ cup dry white wine
1 cup chicken broth

Method:

  1. Heat oil- add onions, ½ t. salt, pepper to pan. Stir frequently, cooking covered. Then, uncover and cook until golden.
  2. Combine onion mixture w/ ¼ t. salt, cheese, parsley, milk, thyme, stirring until mixed.
  3. Rub chicken w/ salt/pepper. Make a pocket into chicken breasts, and stuff cheese mixture into pocket.
  4. Place chicken into pain, sauté until chicken is done 10 minutes.  Remove chicken from pan.
  5. Add wine to pan, then brown with leftover bits. Add chicken broth and reduce into ¼ cup sauce. Serve w/ chicken.
