Ingredients:
1.5 t. olive oil
1 lb green onions, sliced
¾ t. salt
3 oz. goat cheese
1 T. parsley, chopped
½ t. ground black peppe
1 T. milk
1 ½ t. fresh thyme
6 chicken breast
½ cup dry white wine
1 cup chicken broth
Method:
- Heat oil- add onions, ½ t. salt, pepper to pan. Stir frequently, cooking covered. Then, uncover and cook until golden.
- Combine onion mixture w/ ¼ t. salt, cheese, parsley, milk, thyme, stirring until mixed.
- Rub chicken w/ salt/pepper. Make a pocket into chicken breasts, and stuff cheese mixture into pocket.
- Place chicken into pain, sauté until chicken is done 10 minutes. Remove chicken from pan.
- Add wine to pan, then brown with leftover bits. Add chicken broth and reduce into ¼ cup sauce. Serve w/ chicken.
