Arepas de Choclo w/ Guacamole
Ingredients:
2 cups corn kernels
1.5 cups chicken stock
2 cups cornmeal
2 T. sour cream
1 T. sugar
2 oz. Manchego cheese, grated
2 T. unsalted butter
Guacamole
Method:
- In a blender, process corn kernels and chicken stock until smooth.
- Pour cornmeal into large bowl. Add sour cream & sugar.
- Add chicken stock/corn mixture into bowl, while stirring with hands. Add cheese. Form mixture into small balls.
- Flatten into pancakes2” diameter / ¼” thick. Melt butter into sause pan, then sauté arepas in batches until golden brown.
- Top with filling or guacamole and serve as appetizer.
