Enchiladas Suizas
Ingredients:
2 roasted poblano chiles
1 cup heavy cream
12 corn tortillas
4 cups shredded chicken
1.5 cups shredded Chihuahua cheese
Fresh cilantro
4 cups cooked green salsa
Method:
- Heat oven to 375 degrees.
- Pour green sauce in blender jar, adding poblanos.
- Pour into medium saucepan, adding remaining sauce and cream.
- Soften tortillas in saucepan, then fill with chicken.
- Pour hot sauce over enchiladas. Sprinkle w/ cheese. Bake 20 minutes.
Cooked Green Salsa
2 lbs tomatillos (cooked in saucepan)
2 jalapenos (cooked w/ tomatillos)
3 garlic cloves minced
1 t. ground cumin
1 T. salt
1 bunch cilantro
1 T. vegetable oil
Method: Blend these ingredients together. Simmer for 10 minutes.
