Grilled Vidalia Onions w/ Spice Rub
Ingredients:
1 t. dry mustard
1 t. dried oregano
2 T. paprika
1 T. ancho chili powder
1 t. cayenne pepper
2 t. each ground cumin & coriander
1 t. kosher salt
1 t. coarsely ground black pepper
4 vidalia onions, cut into ¼” slices
Method:
- Heat grill to medium-high. Whisk seasonings together in a small bowl.
- Brush onion slices on both sides w/ canola oil.
- Rub one side of each slice with seasoning mixture & place rub side down on grill.
- Grill until golden brown and a crust has formed, about 3 to 4 minutes.
- Flip and continue grilling until just thoroughly cooked.
