Tostones w/ Garlic Herb Mojito

Ingredients:

1 plantain, peeled and broken into chunks
Garlic salt to taste
Cajun seasoning to taste
Mojito: ¾ cup white wine, 1 lime juice, pinch saffron threads, 1 pinch salt, 5 cloves roasted garlic, 1 cup butter, 2 sprigs thyme

Method:

  1. Heat the oil in a large skillet. Place plantains in the oil and fry on both sides for 3 minutes per side.
  2. Remove the plantains from the pan and flatten the plantains by placing a plate over the fried plantains and pressing down.
  3. Then return them to the hot oil and fry 1 minute on each side.
  4. Salt & season to taste and serve immediately.
  5. To make mojito, boil wine & lime juice.
  6. Add saffron & salt, then simmer until reduced.
  7. Add garlic & butter, then thyme  leaves.
