Pasta E Fagioli Soup

Ingredients:

40 oz. beef stock
½ lb. ground beef
1 onion; chopped
2 cloves garlic, chopped
1 shallot, chopped
2 chile peppers, chopped
2 carrots; slivered
16 oz tomatoes; canned, diced
1 can red kidney beans
1 can white kidney beans
21 oz spaghetti sauce
3.5 oz. dry pasta shell macaroni
Spices: 1 ½ t. oregano, 1 t. pepper, 2 t. parsley, 2/3 t. Tabasco sauce

Method:

  1. Saute beef in oil until browned.
  2. Add onions, carrots and tomatoes
  3. Simmer for about 10 minutes.
  4. Add drained beans, stock, oregano, pepper, Tabasco, spaghetti sauce, parsley, and pasta.
  5. Simmer until celery and carrots are tender, about 45 minutes.
