Spicy Asian Soup

Ingredients:

48 oz chicken broth
1 lb chicken, shredded
3T. cornstarch slurry
1 cup sliced mushrooms
1 red bell pepper, diced
Spices: ¼ cup soy sauce, 1 T. brown sugar, ¼ t. chili sauce, 2T. lime juice, 1” ginger minced
Garnish: 1 t. lime zest, 2 T. chopped cilantro, ½ avocado diced, fried wonton wrappers

Method:

  1. Combine chicken broth w/ spices.
  2. Boil for 5 minutes.
  3. Add chicken &mushrooms.
  4. Simmer for 10 minutes.
  5. Stir in peppers, zest, cilantro.
  6. Remove from heat and garnish.
