Artichoke Tomato Chevre Spread
Ingredients:
½ cup olive oil
3 garlic cloves minced
6 oz jar artichoke, d chopped
2 medium tomatoes, diced
2 T. chopped sweet basil
3 cups crumbled goat cheese
1/3 cup sliced ripe olives
1-2 T. pine nuts, toasted
Method:
- Mix first 7 ingredients in medium bowl. Cover.
- Marinate in refrigerator for several hours.
- To serve, bring to room temperature.
- Sprinkle pine nuts over top. Serve on baguette slices.
